Paleo Diet Recipes:

Baked Lemon Herb Salmon

Ingredients:

  • 2 salmon filets
  • Juice and zest of 1 lemon
  • 2 tablespoons of chopped fresh herbs (such as parsley, dill, or rosemary)
  • 2 cloves of garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon of olive oil

Instructions:

  • Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • In a small bowl, combine the lemon juice, lemon zest, chopped herbs, minced garlic, salt, and pepper.
  • Place the salmon fillets on the prepared baking sheet and drizzle with olive oil.
  • Spread the lemon herb mixture evenly over the salmon.
  • Bake for 12-15 minutes or until the salmon is cooked through and flakes easily with a fork.
  • Serve hot and garnish with additional fresh herbs, if desired.

Paleo Cauliflower Fried Rice

Ingredients:

  • 1 small head of cauliflower, riced (approximately 4 cups)
  • 2 tablespoons of coconut oil
  • 1 small onion, diced
  • 2 cloves of garlic, minced
  • 1 cup of mixed vegetables (carrots, peas, bell peppers, etc.)
  • 2 tablespoons of coconut aminos (a paleo-friendly soy sauce alternative)
  • 2 eggs, lightly beaten
  • Salt and pepper to taste
  • Optional toppings: chopped green onions, sesame seeds

Instructions:

  • In a large skillet or wok, heat coconut oil over medium heat.
  • Add the diced onion and minced garlic, and sauté until fragrant and translucent.
  • Add the mixed vegetables to the skillet and cook until they are slightly tender.
  • Push the vegetables to one side of the skillet and add the beaten eggs to the other side. Scramble the eggs until cooked through.
  • Add the riced cauliflower to the skillet and stir to combine with the vegetables and eggs.
  • Drizzle the coconut aminos over the mixture and continue to stir-fry for an additional 5-7 minutes until the cauliflower is cooked but still slightly crisp.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with chopped green onions and sesame seeds, if desired.

Paleo Banana Almond Muffins

Ingredients:

  • 2 ripe bananas, mashed
  • 3 eggs
  • 1/4 cup of almond butter
  • 2 tablespoons of coconut oil, melted
  • 1/2 cup of almond flour
  • 1/4 cup of coconut flour
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of cinnamon
  • Pinch of salt

Instructions:

  • Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  • In a large bowl, combine the mashed bananas, eggs, almond butter, and melted coconut oil. Mix until well combined.
  • In a separate bowl, whisk together the almond flour, coconut flour, baking powder, cinnamon, and salt.
  • Add the dry ingredients to the wet ingredients and stir until a smooth batter forms.
  • Divide the batter evenly among the prepared muffin cups, filling each about 2/3 full.
  • Bake for 20-25 minutes or until a toothpick inserted into the center of a muffin comes out clean.
  • Allow the muffins to cool for a few minutes in the pan before transferring them to a wire rack to cool completely.
